Surprise of Macaron Tiramisu cake

What they have in common the macaron and the Tiramisu? Nothing! but with a bit of creativity we can have good results like this:

…Tiramisu cake with some yellow macarons on top! It was a good 3 hours after  making and baking the cake by myself, whilst IK is at a volleyball comp.

Self lesson 1: never put the macarons on top of the cake unless immediately served – they get moisture over the night in the fridge and they collapse easier on the way..

Self lesson 2: I’ve got to drive when it comes to cake delivery – taking the train is just a nightmare and the troublesome mistake ever made! No wonder why professional cake makers required a special delivery truck!…

To make tiramisu layered cake:

You’ll need:

  • Vegetable oil, to grease
  • 75 grams of sliced almond
  • 2 round sponge cakes (refer below)
  • 125ml of fresh espresso coffee
  • 1 teaspoons of rum or 2 teaspoons of rum essence
  • 45 grams of brown sugar
  • 500 grams of mascarpone
  • 45 grams of  icing sugar mixture
  • 1 tablespoon of coffee essence
  • 1 teaspoon of vanilla essence
  • Cocoa powder, to dust
