Bourbon cookies Tiramisu

BOURBON Cookies or biscuit

the name of these cookies might suggest the use of the famous whiskey “Bourbon ” as their ingredient but it is not so. This biscuit is a sandwich style biscuit consisting of two thin oblong dark chocolate– flavoured biscuits with  filling chocolate buttercream.

This is definitely a tasty vegan Tiramisu

Burbon Tiramisu



Serves 6
Prep time: 20 minutes + setting overnight
1 can SunPride* full-fat coconut milk, left overnight in the fridge
2 tsp stevia powder + 1 tsp
100g walnuts, soaked for 20 minutes in water
50 ml water
3 shots Kahlua* (or other coffee liqueur)
250g Bourbon biscuits
150ml strong coffee (1 heaped tsp coffee granules in hot water)
cocoa powder, to dust
Scoop out the hardened coconut cream from the top of the can. Be careful not to shake the can, as this will mix the coconut cream into the coconut water, which is collected at the bottom of the can.
Vigorously whip the coconut cream with 2 tsp stevia powder. Set aside in the fridge to stiffen.
